Aging Gracefully: The Process of Ripening Cheese

Peter Kindel, the Hawthorne Valley Farm cheesemaker, will lead a workshop, tasting, and discussion about cheese. The 18-year veteran will teach participants about mold ripening, and show them how to transform curds into finished cheese and set up an at home aging facility.
